Learn how to prepare your fresh pasta

Flat Pasta

  1. Bring a large pot of water to a rolling boil
  2. Season water with Kosher salt – generous pinch
  3. Gently drop pasta in small portions into water and stir
  4. Boil for 60 seconds for al dente – if cooking more than 1lb. add 30 seconds for each additional lb.
  5. Watch pot closely as fresh pasta cooks quickly
  6. Drain pasta in colander
  7. Place a ladle full of sauce in pot just used for cooking pasta
  8. Add cooked pasta back into pot and stir gently to coat
  9. Serve pasta in bowls, add sauce to taste
  10. Add grated parmesan to taste and Enjoy!

Ravioli

  1. Bring a large pot of water to a rolling boil
  2. Season water with Kosher salt – generous pinch
  3. Gently drop frozen ravioli quickly into water and stir
  4. Boil for 3 minutes – do not over cook or ravioli will open
  5. Remove from water with slotted spoon or “spider”
  6. Do not drain in colander as this might break the pasta
  7. Serve pasta in bowls, add sauce to taste
  8. Add grated parmesan to taste and Enjoy!
