Learn how to prepare your fresh pasta
Flat Pasta
- Bring a large pot of water to a rolling boil
- Season water with Kosher salt – generous pinch
- Gently drop pasta in small portions into water and stir
- Boil for 60 seconds for al dente – if cooking more than 1lb. add 30 seconds for each additional lb.
- Watch pot closely as fresh pasta cooks quickly
- Drain pasta in colander
- Place a ladle full of sauce in pot just used for cooking pasta
- Add cooked pasta back into pot and stir gently to coat
- Serve pasta in bowls, add sauce to taste
- Add grated parmesan to taste and Enjoy!
Ravioli
- Bring a large pot of water to a rolling boil
- Season water with Kosher salt – generous pinch
- Gently drop frozen ravioli quickly into water and stir
- Boil for 3 minutes – do not over cook or ravioli will open
- Remove from water with slotted spoon or “spider”
- Do not drain in colander as this might break the pasta
- Serve pasta in bowls, add sauce to taste
- Add grated parmesan to taste and Enjoy!
